2 garlic cloves, minced        

2 tablespoons olive oil        

¾ cup yellow onion, chopped        

1 and ½ cups white rice        

12 ounces spinach, chopped

3 and ½ cups hot veggie stock        

A pinch of salt and black pepper       

2 tablespoons lemon juice 


Set your instant pot on sauté mode, add the oil, heat it up, add garlic and onions, stir and sauté for 5 minutes. 

Add the rest of the ingredients except the spinach, put the lid on and cook on High for 8 minutes. Release the pressure fast for 5 minutes, add the spinach, toss, put the lid back on and cook on High for 3 minutes more. 

Release the pressure fast again for 5 minutes,divide the mix between plates and serve as a side dish.
