3 pounds sweet potatoes, peeled and roughly cut into wedges
1 cup water
¼ cup coconut milk
1/3 cup coconut sugar
½ teaspoon nutmeg, ground
1 teaspoon cinnamon powder
¼ teaspoon allspice
A pinch of cayenne pepper
¼ cup coconut, unsweetened and shredded
Add the water to your instant pot, add steamer basket, add the potatoes into the basket, put the lid on and cook on High for 20 minutes.
Release the pressure fast for 5 minutes, drain the water, transfer the potatoes to a bowl and clean the instant pot. In the clean instant pot, combine the potatoes with the rest of the ingredients except the coconut, put the lid on and cook on High for 5 minutes.
Release the pressure fast for 5 minutes, divide the mix between plates and serve as a side dish.
