1 big turkey breast, skinless, boneless and cubed
1 yellow onion, chopped
4 garlic cloves, minced
¼ cup parsley, chopped
A pinch of salt and black pepper
1 teaspoon oregano, dried
1 cup coconut milk
1 cup chicken stock
2 tablespoons olive oil
Set your instant pot on Sauté mode, add the oil, heat it up, add the onion, garlic and the turkey and brown for 5 minutes.
Add the rest of the ingredients, toss, put the lid on and cook on High for 15 minutes.
Release the pressure naturally for 10 minutes, divide everything between plates and serve.
